take a strip of foil large enough to create a once folded pocket the size of the fillet. sprinkle some lemon juice, salt, pepper, and i use ceyenne as well for some spice. fold the foil into a sealed pouch, place in the conventional oven, oven, or even on a grill. oven times i usually do about 10 minutes preheated to 450. the tilapia fillets are really thin so they cook nice and quick. to see if its done, just open the foil pouch and see if the entire fillet has turned a nice white color

I usually just bake mine in the oven without even using oil, just put salt on the pan then put the fish on top, doesn't even usually stick. Poaching is another option as well, could use broth or even water I guess although it sounds like you want something with high direct heat, in which case try using a broiler.

Sure, it doesn’t have the fantastic omega-6:omega-3 ratio that salmon does, but there’s so little fat in tilapia that it’s a nonissue. If you currently supplement with 1-2 grams of fish oil 2-3 times per day with meals, you’ll be almost certain to consume a 1:1 ratio of omega-6:omega-3 fats.
